Today I really felt like baking so guess what? I DID!
I’ve been really craving chocolate chip cookies but we had no butter I could cook with.
So, I Googled cookie recipes without butter to see how I could go about making some and I found an American recipe.
I don’t mind American recipes but you have to faff about converting cups to grams and so-forth.
But I did it all anyway and here it is:
Ingredients:
225g of plain flour
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1 teaspoon of cocoa powder
175g sugar (can be granulated or caster)
120ml vegetable oil
1 large egg
1 teaspoon of honey or golden syrup
as many chocolate chips as you like!
Method:
Preheat the oven to 180 degrees centigrade.
Stir together flour, baking powder, salt and cocoa powder in a bowl and set to the side.
In a separate bowl, mix the sugar, oil, egg and honey/golden syrup.
Add the flour mix into the sugar mix bit by bit until it’s all incorporated.
Add the chocolate chips and give it a good stir.
Use an ice cream scoop to scoop the dough and then roll it between our hands into a ball, press onto sheet with your fingers slightly.
Repeat over and over until all the dough is gone.
Bake for 10-12 minutes until they start to look golden on the top.
Take out when they’re done and voila, beautiful soft choc chip cookies!
I made about 10 cookies and they were absolutely delicious!
